At Durkin’s Pizza in McKinney, we believe great pizza starts with a great pizza cook – and we’re always looking for people who want to perfect the craft.

It Starts with the Dough

We make our dough fresh every day with unbleached, unbromated flour. Good dough is alive: it changes with the temperature in the kitchen, the time of day and how long it has rested. A skilled pizza cook learns to read it – how it feels, how it stretches, when it’s ready – and handles it gently so the crust bakes up light and airy instead of dense and tough.

Stretching and Shaping by Hand

Every Durkin’s pizza is shaped by hand. Stretch too thin and the center tears or goes soggy; too thick and the crust never bakes through. A good cook gets an even round every time, whether it’s a 10” lunch pizza or a 16” large for the family, and knows how a gluten-free or cauliflower crust needs to be handled differently.

Balance: Sauce, Cheese and Toppings

More isn’t always better. Too much sauce makes a pizza wet; too many toppings keep the middle from cooking. Great pizza cooks build a pie so every bite has the right balance – our house sauce, real mozzarella and toppings spread edge to edge – whether it’s a simple pepperoni, a loaded Kitchen Sink or one of our paneer tikka and chicken tikka pizzas.

Mastering the Bake

The oven is where it all comes together. A pizza cook watches every pie: the crust turning golden, the cheese bubbling and just starting to brown, the bottom crisp enough to hold its shape.
